October 9/2020 Rude Cards! (warning swear words)

I made a rude card, and I love it. It was simple to make and I love love love the stamp. I bought this card with my best bud in mind. She loves cats and has the type of sense of humor this stamp was made for (this is the same recipient of the cat butthole card). The above video is me putting it together. I’ll post the finished result below.

I might colour in the woman and the cat if I make the card again. Right now I’m loving it the way it is.

October 7/2020 Kahlua Mini Cupcakes!

I got a new gadget on the weekend (this was before my “Stop Buying So Much Shit! You’re killing the planet and being wasteful.” epiphany… more about that another day). I got this used from the classifieds, so my guilt about it, is minimal.

It’s a mini cupcake maker and came with a full recipe book… for $15. Not a bad score!

I followed the recipe for Kahlua chocolate cupcakes, very loosely. I didn’t have half the ingredients and made up my own for some of it. For example I didn’t have any milk (we never seem to have milk), so I just used my lime flavoured Bubly instead. I also used an egg substitute from Bob’s Redmill, because I didn’t have any eggs. There was something else… oh yes, coffee. I didn’t have any made coffee, so I used more Kahlua.

That could explain why they stuck so bad. It was a nightmare to get them out. I don’t blame the cupcake maker for it, I really messed with the recipe and I didn’t use cooking spray, like they suggested (I mean it was non-stick)

The second batch, I used cooking spray, and they came out like a dream. I will remember that for next time. I iced them with Kahlua icing, which I didn’t have icing sugar for. Turns out you can make icing out of granulated white sugar and cornstarch. I had no idea! I’ll put the recipe I used here. I’ll never buy icing sugar again! I’m just going to make it. I didn’t blend the sugar long enough and the icing was grainy, but they were fine.

They were easier than regular full sized cupcakes and turned out pretty good. You can also use this device to make quiches and other appetizer like things. I’ll have to try one of the cheesecake recipes next.

OMAD Week 5

It was a great week for me. I’m now down seven pounds in total and even crossed into the next 10lb section. I hadn’t lost any weight for the last two weeks, so I’m really happy about it. I ate OMAD (one meal a day) Monday to Friday, and then whatever I wanted on the weekend (I did use a little more restraint this weekend). That being said, I still ate pie, cookies, and went to Montana’s for dinner.

I’ve been loving Hello Fresh. The meals were SO good and also really healthy. Unfortunately, it’s just too expensive to continue on, but I’m going to try and keep in the spirit of it and eat less takeout and cook more at home. I do love the idea of someone choosing your meal (especially if it’s full of veggies and healthy) so I can try new things.

So far, I’m loving this way of eating. I still get hungry a lot during the day, but it passes. I haven’t had problems with dizziness in awhile. It’s something I think I will be able to stick with.

I saw a genius post on Facebook with someone using string to measure their waist one a month and comparing the string size. I’m going to do that. I wish I had done that from the start. Here’s to week six!

Kitchen Gadgets, Books, and Breakfast

It’s been a great weekend so far. It started with breakfast at a café with the puppy, apple picking, soon I’ll be visiting family, and I’ve started a new book ( I do love Stephen King).

Our beautiful step daughter, gifted Jay this fun kitchen gadget.

It’s a mini pie maker! As we have a monster sized bag of apples, we decided to make an apple pie. I used a premade vegetarian pie crust, waited until it was at room temperature, and then rolled it, and cut out the pie crust shapes.

The filling was made with grated apple, cinnamon and sugar, with a little cornstarch to thicken it up.

The recipe was designed to be fast and easy. The pie was then topped with the remaining crust cut out, then baked.

It was baked for only 5 minutes. It was the fasted pie I’ve ever made.

It was good too. It reminded me of the pies you get at Mcdonald’s and Harveys. I will probably make a different apple pie filling recipe for it, when I make it again. I’m really excited to try other fruit flavours. It was fast, easy, fun, and yummy. I will definitely be using this little gadget again.

Apple Picking 2020

Another year of picking apples at Myers Farm in Copetown. The staff was super friendly and I love this place, I try to go every Fall. Each year I get a monster sized bag of apples. They are so delicious. I just love apples!! I went with my spouse and best friend. We had a great time. It’s activities like this that really help improve my mood. It gets me outside into the fresh air for some fun and happiness.

There were no wagons this year because of COVID, so we carried the bags through the orchard (there is also a 45 minute time limit – also because of COVID). It was a good workout! Between the three of us, we had two humungous bags of apples, and were able to take turns carrying them, so it really wasn’t too difficult. We did see a couple guys hunched over, hauling two huge bags under their arms. They didn’t look like they though it wasn’t too difficult lol. I hope they made it back to their cars without dropping them!

I highly recommend an afternoon of apple picking. You will know exactly what I’m talking about when I mention being “apple full” by the end of it. ❤ ❤ ❤

Mail Haul For The Week Of September 28/2020

This week my Halloween craft supplies came in, just in time for the month of October. It was a mix of cutting dies and stamps. I’m very excited to start playing with them. There was a lot of packages to open so instead of pictures, I did a video of me opening them. I hope to post some Halloween cards soon.

OMAD One Month

The week had started out great, by Friday I was down a total of two pounds for the week and 7 pounds since I started, but I messed it all up over the weekend. Today I was up almost three pounds making my grand total of weight loss for the last two weeks at only around 1/2 a pound. I don’t to OMAD (one meal a day) over the weekends, only weekday, and then eat whatever I want on weekends. Clearly, I need to quit “whatever I want” on weekends, it’s wrecking any progress I make during the week.

It’s a new week and although I don’t plan on eating OMAD on weekends, I will be behaving a lot more than I have been.

Mail, Fish, and the Blues

This week has been filled with beautiful cool weather and sunshine. And I… have not felt like going outside. It must be the times we’re living in, as I seem to have the blues, and lack of drive. I always love this time of year, and an energy boost always came with the cooler weather, but not this year. I have not felt like going outside at all, lately. I just want to sit in my chair and watch YouTube. I’m really not sure how to pull myself out of this funk. I know being outside and some exercise will lift my mood, but I can’t seem to make myself do it.

These cutting dies and stamps came in the mail this week, along with a letter from a lovely friend. It will be time for Halloween things soon, this came at a perfect time.

I made it out to visit family this weekend and they took me to see the salmon run (I’ll post a quick video at the end). I’ve never seen the salmon run before. It was really enthralling to see tons of huge fish, swimming up the stream, but also sad because they were there to spawn and die. Some of them looked so healthy and vibrant, that I hoped they made it through to live for years; a lot of the others looked like zombie fish.
